Ingredients

  • 1 tbsp 1 tbsp butter or olive oil, divided
  • 3 3 large egglarge eggs
  • 2 (2 oz.) 2 (55 g) slices Canadian bacon
  • ½ cup (½ oz.) 120 ml (15 g) baby spinach
  • salt and ground black pepper, to taste

Making low carb simple

Instructions

Instructions are for 1 serving. Please modify as needed.

  1. Heat up a large skillet over medium-high heat with half of the butter.

  2. When hot, crack the eggs straight into the pan, season with salt and pepper, and fry until the whites are set. Place a lid on the pan, or flip the eggs over and cook for an additional minute.

  3. Remove the eggs from the pan and add the bacon and spinach. Season with salt and pepper to taste.

  4. Fry until the bacon darkens and the spinach has wilted.

  5. Put everything on a plate and top the spinach with the rest of the butter before serving.

Tip

Swap Canadian bacon with regular bacon or turkey bacon.

Cook the eggs any way you like. You can also hard boil the eggs and make extra for breakfast later in the week, or for a quick high protein snack.

Spinach can be substituted with kale.

    This is a staple breakfast here in my country Malta ie the greens with bacon n eggs.
    However the greens either spinach or rucola are never cooked directly in a skillet. What we do is put the fresh leafy greens in a bowl, add and mix the dressing usually evoo, vinegar, fresh garlic, tumeric, and place the fried eggs on top of the leafy greens to, sort of, cook slightly with the hot fried egg on top.
    The leafy greens are usually chopped before, to extract the lectins from the veg as the chopping mimicks the process of an animal’s chew in nature. Usually all veg have some kind of self defense through lectins pectins etc. The slight cook also helps to eliminate these defensive chemicals.
    Spinach has a lot of oxylates so make sure to rotate with other leafy greens like rucola.

    The best way to cook this is on a griddle or in a large skillet so you can cook the eggs and meat at the same time. Put them on a plate and quickly wilt the spinach. That way, you don't end up with cold eggs while you wait for the spinach and meat to cook, as you do in the recipe instructions. :)

That way, you don't end up with cold eggs while you wait for the spinach and meat to cook, as you do in the recipe instructions. :)
